About the Copulos Room

The purpose of the Stella M. Copulos, MS, RD, LD/N Nutritional Education Room at the University of Miami Miller School of Medicine is to create a welcoming environment for children and their families who seek dietary counseling for metabolic and genetic disorders.

The Dr. John T. Macdonald Foundation Department of Human Genetics and the Mailman Center for Child Development welcome children of all ages to utilize the services of our trained dieticians for professional medical advice and life skills. Our goal is to ensure a long, healthy life through proper dietary instruction to all patients, providing the most up-to-date scientific information combined with compassionate care.

History

The Stella M. Copulos, MS, RD, LD/N Nutritional Education Room was established by the Copulos family in loving memory of their beloved wife, mother, and grandmother, Stella, who received her B.S. in Dietetics and Institutional Management from the University of Miami in 1958 and her Masters Degree in Institutional Management from Florida International University in 1975.  She was a highly respected Registered Dietician, Licensed Nutritionist, Patient Food Service Director of Baptist Memorial Hospital from 1974-1990, an officer of the Miami Dietetic Association, and a member of the Palm Beach Dietetic Association.  Her professional accomplishments include pioneering the establishment of the first computerized tray line food delivery system, the publishing of her thesis, “Menu Presentation System Change,” the review of abstracts for display at the National Dietetic Association Convention, and a contributor to the American Dietetic Association and Foundation.

Stella’s career and life centered around raising and nurturing a healthy family and in turn, teaching others the same skills. Her professional influence and care provided countless families and children with the guidance needed to live successful, productive lives. It is in this spirit that this room was dedicated--to continue the good work she embraced and enjoyed.
